Celebrations Peach CobblerAre you peach cobbler fans? There are few things that I love more than fresh peaches and that plus fall spices? Oh man. When David and I saw the peach cobbler in Celebrations, it was one of our first priorities. I honestly wasn't so sure if I would be into it because the topping is made primarily of cashew butter--would it be gooey? Would it seem undercooked? Of course, I decided to make it for people who eat gluten daily and are pretty into it so I knew I would get their honest feedback. We all loved it. It was rich and full of flavor-- I mean look at all of that caramelizing peach goodness. It was comforting in all of the best ways. The cashew flavor was an exceptional pairing with the peaches and spices. I even modified the recipe by halving it (except I forgot to halve the sweetener!) and used a different pan size and it still came out beautifully.
